Pumpkin Spice Muffins

It's Fall everybody! Well almost. Starbucks used to offer Pumpkins Muffins, and then they got rid of them, so I thankfully started making my own! I've been making these muffins for years, even sometimes turning them into Pumpkin Cookies, which is super simple to do if you're not wanting muffins.


This four ingredient recipe is so easy kids could make it, and feel like a chef! For starters you will need a box of Betty Crocker Spice Cake Mix , one 15 ounce can of Libby's 100% Pure Pumpkin, three eggs, and 1/4th cup of water. Normally, I add in cinnamon and nutmeg for just a little bit of extra spice!





Preheat your oven to 350 degrees. Pour all ingredients into a bowl, and mix together using an electric hand mixer.





Line your cupcake pan. I got these from Hobby Lobby in their fall aisle, they were $1.99, but you can use whichever ones you'd like. Using an ice cream scoop, scoop your batter into your baking cups. Once you have your batter in your pan, you have two options. You can make a streusel using 1/2 cup flour, 1/2 cup brown sugar, and 1/4 cup cold butter. You'll want to mix your flour and sugar together, and cut in your butter. Then just add a couple spoonfuls on top of the batter. Your second option is to add Pumpkin Seeds. I found these at Target. If you're feeling really adventurous, you could add both the seeds and streusel!





Bake for 15 to 18 minutes, let cool, and enjoy!






*If you are wanting to make cookies and not muffins, leave out the eggs and water. Then, frost them with cream cheese frosting and flavor it by adding in nutmeg and cinnamon.
